Dear John’s and the two Year Pop Up Concept

The not so sexy fact is that it is really, ,really hard to run a great restaurant. The work is back breaking and clients are fickle even if yo nail the concept and execute like crazy.

For that reason, a temporary restaurant makes sense. Think of it like a movie run – we are not, for example, still playing Hitchcock movies in our theaters.  Focusing on a pop up intensifies the planning, and it incentivizes the customer base. It also enables the founding group to emerge more as rock stars rather than drudges.

That is what is happening at Dear John’s in California.
