Do You Roast Your Chicken in a Mushroom Bed?

Up until today, I do not. But after watching this from BA, I will give this a try.  Alison Roman is the chef

Roman uses a bed of mixed mushrooms as a makeshift rack for the chicken in a cast-iron skillet—which get crispy and soak up all the rendered chicken fat. But if you’re in a potato mood or have a surplus of root vegetables, add them in. The point is to get a twofer with sides and a main in one dish that you can throw in a 325°F oven for two-and-a-half hours while you binge old episodes of 30 Rock on Netflix again. (No, just us?)
